Keto WOE Cheeseball Bites




Tonya found this recipe online and posted it to Facebook.  I adapted the recipe so that it would be Keto friendly.  The ingredients don't have to be EXACTLY as shown below.  Cheeseballs are very forgiving.


Ingredients

8 oz. cream cheese, softened
1/2 cup shredded Cheddar
1 tsp garlic powder
1 tsp paprika
1/4 tsp black pepper
4 slices bacon, cooked and finely crumbled
1/3 cup finely chopped fresh chives
1/3 cup finely chopped almonds
12 toothpicks


Directions

Mix together cream cheese, cheddar, garlic powder, and paprika and season with salt and pepper. 

Form into 12 bite sized balls and refrigerate until firm, 1 hour.

In a shallow bowl or on a plate, stir together cooked bacon, chives, and almonds.

Roll balls in bacon-chive-almond mixture and insert a toothpick stick in each ball.

Serve right away, or cover loosely with saran wrap in the fridge.

Peanut Butter Cinnamon Choco Bombs Keto WOE



Not only are these tasty, but while your on the Keto Way Of Eating, it ensures that your getting enough fat in your diet.


Ingredients


Top layer

4 tbsp coconut oil
4 tbsp cocoa
1/4 cup chopped almonds
3 tsp spenda
1 tsp vanilla

Bottom Layer

1/2 cup peanut butter
1/4 tsp cinnamon
sea salt


Directions

Melt coconut oil in microwave for 45 seconds.

Still in cocao, spenda and vanilla, mixxing well until smooth.  Fold in chopped nuts.

Pour chocolate mixture into a pan and spread evenly.

Mix together the cinamon and peanut butter.  Gently pour over the chocolate mixture.

Sprinkly with sea salt, then freeze for 20 minutes.

Slice before serving.

Beef and Broccoli the Keto WOE


Every so often, you get a hankering for something that gets your mouth watering.  Although I didn't include it in the recipe, I have used Kitchen Bouquet to darken the liquid.  I also used Zantham Gum to thicken the broth.

Ingredients

1 1/2 lbs thin cut beef round steak, sliced into thin strips
1/4 cup beef stock
1 tbsp sesame oil
1 tsp ginger
1/4 tsp crushed red pepper flakes
4 cloves garlic, minced
6 oz mushrooms, thinly sliced
1 lb broccoli florets
3 tbsp olive oil

Directions

Slice the steak into thin strips - about 1/4 inch thick

In a large mixing bowl, beef stock, sesame oil, ginger, red pepper flakes, and garlic.

Add the steak to the bowl and mix until all pieces are coated. Set aside. Let marinate for an hour. Longer if time allows.

While the meat is marinating, clean and trim the broccoli and slice the mushrooms.

Heat a wok or a large skillet over high heat. Add the olive oil to the pan.

Once the pan is very hot, add the broccoli, coating it in the oil and stir frying for 2-3 minutes.

Remove the beef from the marinade and add to the hot pan. 

Stir fry 2-3 minutes.

Pour the sauce in the pan and add the mushrooms.

Continue stir frying over high heat until the meat is cooked through and the sauce has reduced and thickened. This will happen naturally with high heat and continuous stirring.

If you lose too much of your sauce in the process, add a little extra beef stock to the pan.

As you can see by the video, I didn't exactly follow the directions.  But in my opinion, that's what cooking is about.  You get the basic ingredients, but then make it your way.

Mayonnaise Parmesan Chicken the Keto WOE



I seen this recipe a few years ago and couldn't believe that this was real.  Well it is real!  Really delicious! 

It has always been my own past experience, that the dark meat is the juiciest part of the chicken.  Not today!


Ingredients

1/2 cup Hellmann's® Mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
2 tsp. Italian seasonings


Directions

Preheat oven to 425°.

Combine Hellmann's® Mayonnaise with cheese and seasonings in medium bowl. 

Arrange chicken on baking sheet. 

Evenly top with Mayonnaise mixture.

Bake until chicken is thoroughly cooked, about 20 minutes.
