Meatball Boats
Mum will occasionally find a recipe that looks really good.
Ingredients
1 lb. ground beef
1 large egg
1/3 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 Tbsp. chopped parsley
Salt & pepper
1 Tbsp. olive oil
2 cup marinara sauce
4 crusty Italian sandwich rolls
12 slices provolone
1/2 cup shredded mozzarella
1/4 cup shredded parmesan

Cookie sheet
Parchment paper
Cutting board with knife
Directions
Preheat oven to 375°F.
Cover your cookie sheet with parchment paper, or spray a baking sheet with non-stick spray.
Meatballs
In a large bowl, combine ground beef with egg, breadcrumbs, parmesan, garlic, and parsley.
Season with salt and pepper. Mix well.
Form into 12 evenly sized meatballs.
In a large skillet over medium heat, heat oil.
Cook meatballs until seared on all sides, about 4 minutes. Add marinara sauce, gently stir, and cover with a lid.
Turn the heat down to simmer until meatballs are no longer pink, about 8-10 minutes more. Internal temperature of the meatballs should be 160°F.
Prepare the Bread Boats
Cut a long rectangle through the top of the bread loaf and hollow the top of your hoagie roll out to make a boat.
Lay three slices of provolone over the roll to cover the hollowed-out area and bake for 5 minutes, until melted.
Then place four meatballs on top of the cheese in a row.
Spoon marinara over the meatballs. Sprinkle the mozzarella equally over the meatballs. Then sprinkle the parmesan.
Place in the oven and bake 6-8 minutes more.

Sopa Azteca (Mexican tortilla soup)

1 cup of boiling water
2 tbsp instant coffee
1 cup packed brown/golden sugar

Directions
Add 2 eggs and continue mixing.
Add 1 cup of flour and 1/2 tsp of baking powder.
Add 2 more eggs and continue beating.
Add 3/4 flour and continue mixing.
Add 1 tsp of baking soda in the date mixture
You can cook the cake between 40 minutes and an hour, or until an inserted tooth pick comes out clean.
In a sauce pan, add butter, heavy cream, and brown sugar. Turn the burner on to medium heat.
Boil until reduced about 3/4 left or half depending on how thick you want it the icing. Let it cool a bit and add the whisky, a good one, I usually use a 30 y/o Canadian whisky.

Potage, French Canadian Vegetable Potage

Ok so it’s not exact mesurements but , butternut squash in cubes , couple of sweet potatoes , if they’re huge just use like 2 , couple of carrots , a ruttabaga , the like white carrots ? French for it is panais , all in a tray with salt pepper and oil and you roast them a bit, I add tomatoes and some garlic depending on how I’m feeling , then I’m a big pot you put some oil and you fry some onion and celery , then you put all of the other cute roasted veggie cube and you put some pints of either veggie or chicken broth , I usually do chicken , and you blend this until smooth, it’s at that point that I usually adjust the seasoning and add a touch of maple syrup, I don’t add cream or butter because I like to add it in my bowls
