Chicken Fricot (Acadian Stew)



Ingredients:

3 lbs (1.5 L) chicken pieces, skin removed
10 cups (2.5 L) water
2 large onions, chopped
2 Tbsp (30 mL) butter
1 Tbsp (15 mL) flour
6 large potatoes peeled and cubed
2 medium carrots peeled and sliced
1 Tbsp (15 mL) salt
1 tsp (5 mL) pepper
1 Tbsp (15 mL) summer savory

Preparation:

1.In large pot simmer the chicken pieces in boiling water for 30 minutes.
2.Remove pieces, save the cooking water and let the chicken cool slightly. Sauté onions in butter for one minute.
3.Add the flour and stir for another 1-2 minutes.
4.Remove the bones from the chicken and cut the meat into bite size pieces.
5.Put all remaining ingredients into the saved cooking water and simmer for another 30 minutes. Taste and adjust seasoning.

Dumplings or Poutine Blanches


 1 cup of flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 cup cold water

Mix the dry ingredients, then gradually add the water and mix just until you have a dough.
Drop dough by spoonfuls into the stew or soup. Cover and cook for 7 minutes; serve.


Mum used to make this Frico (Acadian Chicken soup) for Dad.  Every so often, she would make dumplings.  My brothers loved dumplings so much, Mum would make another pot of just chicken broth and dumplings for them.
