Roast Beef, Onion and Cheese Panini Sandwich


Last weekend I cooked a roast on my Cast Iron Skillet and when I was taking the skillet out of the oven, I accidentally dumped all the beef drippings over the stove, floor and cupboard.  Good thing that Max was there to help clean up.

If you click on the photo below, you will see how smokey it got in the house while I was creating these sandwiches.


But they are so tasty.

It's like your childhood grilled cheese, only adult style.

Ingredients

Cut up a loaf of bread into slices
Roast beef, thinly sliced
Cheese slices, not the processed cheese, but real cheese, what ever your favorite cheese is.  I was using Havarti for this recipe
Medium onion, sliced up
Butter

Stuff you will need

Cutting board
Bread knife
Panini pan
Skillet to fry your onions

Directions

After you have pre-heated your pan, add about a 1/4 cup of butter and fry up the onion.

Butter one side of the slices of bread.

Heat up your Panini Pan.  Once it is hot, add the bread, buttered side down.  Add onion, roast beef and cheese, top of with a slice of bread, buttered side up.  Press down with your Panini Pan lid.

Don't wait too long, as you bread will be toasting rather quickly.  Flip over and press down again with the Panini Pan lid.

Cut up the sandwich and serve while it is still hot.  Tonya liked her sandwich with ketchup on the side.
