Italian sausage or breakfast sausage


Have you ever dreamed about making your own sausages?  It really isn't all that hard.  This is a sausage recipe without putting it into a casing.

I've made these into little hamburger size patties.

If you remember, there is a recipe that I have for the Ultimate Spaghetti Sauce.  This is a really good replacement for any store bought sausage.

Ingredients

1 lb. ground pork
1/2 teaspoon ground pepper 
1 teaspoon parsley flakes
1 or 2 teaspoons Italian seasoning
1/8 teaspoon garlic powder
1/8 teaspoon ground red pepper
1/4 teaspoon crushed fennel seed
1/4 teaspoon paprika
1/2 teaspoon minced onion
1/8 teaspoon salt

Stuff you will need

Mixing bowl
Magic bullet or Mortal & Pestle

Directions

Ground up all the spices that are not already small particles.  i.e. the fennel seeds and the red pepper.  I wasn't able to find any red pepper that was already ground.

Mix the spices in with the ground pork.  If you do this the night before, I find you get a more consistent taste throughout.

Roll into small meat balls and flatten them out.

Fry them up till browned.  

Server them while they are hot.
