Soft Raisin Cookies

Found some raisins in the cupboard and I thought it was high time to make some cookies. 

Ingredients

1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts


Stuff you will need

3 mixing bowls
Mixing spoon
Cookie sheet
Parchment paper
Small spoon

Directions

Pre-heat the oven to 350 F.

In one of the mixing bowls, soak the raisins in the water.

In another mixing bowl, cream together the shortening and sugar.  Add the eggs one at a time.  Plus the vanilla.

In the other mixing bowl, add the dry ingredients and mix well.  Then add to the creamed mixture.

Lastly, DO NOT drain the raisins, add the raisins, water, and the walnuts and mix together.

Using a small spoon, scoop out the mixture and place about 2 inches apart on the parchment lined cookie sheet.

Bake for 12 to 14 minutes, until golden brown.

Pro tip: Flatten them out a bit with a fork, prior to going into the oven.  They will cook better.

Makes about 48 cookies.
