Beef patties and Cabbage Steaks



On my wellness journey, I found this recipe.  Today, is the day we are going to make this.

Ingredients

1 pound ground beef (19 points)
1 onion (chopped finely)
1/4 teaspoon salt
1 teaspoon Italian herbs
1/4 teaspoon pepper
1/2 teaspoon paprika
2 cloves of garlic
10 chives
1 tablespoon dill
1/3 cup plain yogurt (2 WW points)
1 tablespoon tomato paste or salsa
1 cabbage

Stuff you will need

Cutting board with a long sharp knife
Cookie sheet lined with parchment paper
Mixing bowls

Directions

Pre-heat oven to 350 F.

Add the ground beef to a mixing bowl.
Cut the onion so that it's finely chopped.
Add salt, a mixture of Italian herbs, nutmeg, black pepper, paprika and garlic.
Mix well.

Chop the chives and dill.  Add to a separate mixing bowl.
Add 6 tablespoons of plain yogurt and 1 tablespoon of tomato paste.  Mix well.

Cut the cabbage into 3/4 inch steaks and place on a cookie sheet lined with parchment paper.

Create patties from the ground beef and put the patty on top of the cabbage steaks.

Spread the sauce over the ground beef.

Bake at 350°F or 180°C for 45 minutes.

Makes 6 servings at 3.5 WW points

Serve with oven baked potatoes wedges.

Cabbage Schnitzel

 

This time, Mum was on the internet looking for stuff that I would be able to make while on Weight Watchers.  Not sure of the WW points due to it being fried in oil.  

Ingredients

Cabbage (500 g)
Vegetable oil
2 onions
3 cloves of garlic
3 eggs
4 tablespoons of flour (60 g)
1 teaspoon of salt (8 g)
1 teaspoon of paprika (4 g)
1 teaspoon of black pepper (4 g)

To fry;

Vegetable oil

For sauce;

3 tablespoons of yogurt (75 g)
2 sprigs of dill
1 cucumber (grated)
Red powdered pepper

Stuff you will need

Cutting board and sharp knife
Pot to boil the cabbage
Colander
Mixing bowl with large spoon
Frying pan
Spatula
Paper towel

Directions

You can take the time to cut up the cabbage, or, if you got a food processor, put in the blade attachment at the smallest opening and cut up your cabbage.

Once the cabbage has been boiled for about 10 minutes, drain and cool.

Cut up the onion and garlic and fry them with a few tablespoons of oil.  Fry for about 10 minutes.

In a mixing bowl, put the cabbage, onions, garlic, eggs, flour, paprika, salt and pepper.  Mix together.

In a clean frying pan, heat up another few tablespoons of oil.

Put the cabbage mixture into the frying pan, between 1/4 cup and 1/3 cup patties.  Fry till golden brown on both sides.

Transfer to a plate with paper towel to capture the excess oil.

Make you dip and serve while the schnitzel are still warm.

5 minute chocolate cake in a mug



My friend, Rachael Smith posted a chocolate cake on Facebook.  This is more DANGEROUS.  This can be made on demand.

Ingredients

4 tablespoons flour (plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (you can add more or less)
1 dash vanilla

Stuff you will need

Coffee mug
Spoon
Microwave

Directions

Add dry ingredients to a coffee mug and mix well.

Add the egg and mix thoroughly.

Pour in the milk and oil and mix well.

Add the chocolate chips and vanilla essence, mix again.

Put your mug in the microwave and cook for 3 minuter at 1000 watts.

The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little and you can tip onto a plate if you want.

Weight Watchers One Pot Goulash


Well, New Year, new me, so on and so forth.  Tonya has started Weight Watchers and we need some recipes.
 
2 cups = 4 points
12 points if ground beef

Ingredients

1 lb. fat-free ground turkey breast
1 small onion, chopped
1/2 green pepper, chopped
1 clove garlic, minced
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Italian seasoning
14 1/2 oz. diced tomatoes
15 oz. tomato sauce
1 cup water
1 tablespoon Worcestershire sauce
1 cup uncooked elbow macaroni

Stuff you will need

Big pot with lid
Mixing spoon
Cutting board with sharp knife

Directions

Cook the ground turkey in a skillet over medium heat. Add the onions, green pepper and minced garlic and cook for 2 minutes.

Stir in the paprika, salt, pepper and Italian seasoning. Next add the diced tomatoes, tomato sauce, water and Worcestershire sauce. Bring to a simmer, then add the macaroni noodles.

Make sure the noodles are covered by the liquid, then cover and simmer for 15 minutes, stirring occasionally. Check to make sure the noodles are done, then serve.
