Chicken Biscuit Cobbler

Found this on YouTube.  Tonya said, it's a repeater.  It's kinda like a cheater chicken pot pie.

Ingredients

1 Rotisserie Chicken - boned and into bite sized pieces
1/2 cup butter - melted
2 cups Frozen peas and carrots
1 box Red Lobster Cheddar Bay Biscuit Mix
2 cups milk
1 1/2 cups chicken broth
1 can cream of chicken soup

Stuff you will need

9 x 13 baking dish
Mixing bowl
Whisk
Pam cooking spray

Directions

Heat the oven to 350 F.

Spray the baking dish with Pam.

Layer out the shredded chicken if you didn't cut it up into bite sized pieces.  Top this with the melted butter.

Next layer, the frozen peas and carrots.

Mix the entire box of biscuit mix and 2 cups of milk.  Yes, it is going to be soupy.  Pour that, as evenly as you can, over the peas and carrots.  I gave the baking dish a shake to try to get the biscuit mix into the corners.

I used the same mixing bowl and put the 1/2 cups of chicken broth and cream of chicken soup and mix that together and pour on top of the biscuit mix.  Don't try to mix the two together.

Bake at 350 for 1 hour.

Let it sit for 15 minutes before serving.

Makes 8 portions.

I think you could substitute boxed pancake mix for the biscuit mix.  Box said it was 322 grams, which is about 2 1/3 cups of pancake mix.
