Corn Relish, good with fish

The person that posted this said it is good with fish.

Ingredients 

8 cups of corn, 12 ears removed from cob
2 red peppers, diced
2 onions, diced
1 can, 4 oz, red chilies, chopped 
2 1/2 cups white vinegar 
1 1/4 cup sugar
2 tsp mustard seeds
1/2 tsp celery salt
1/2 tsp crushed red pepper 
2 tsp celtic sea salt
Black pepper to taste
2 Tbsp cornstarch mixed with 1/4 cup water

Directions 

In a large mixing bowl, combine corn, red pepper, onions and chilies. 

In a large stock pot, combine vinegar, sugar, mustard seed, celery salt, crushed red pepper and sea salt.

Over medium heat, bring to a boil.  Add the corn mixture.  Reduce heat to low and simmer for 15 minutes.

After 15 minutes, scrape off the foam.

Add cornstarch slurry to the pot.

Heat back to medium and cook for an additional 5 minutes.  Everything is going to thicken.

Ladel into canning jar leaving a 1/4 inch headspace. 

Process in a water bath for 15 minutes.

Once the jar is opened, refrigerate and use within a couple weeks.
