Mayonnaise Chocolate Cake


Chocolate Mayonnaise Cake

3 cups flour
6 tbsps Cocoa Powder
1 tbsp Baking Soda
1 1/2 cup sugar
1/4 tsp salt
1 1/2 cups Mayo
1 1/2 tsp vanilla
1 1/2 cup water

Ganache
2 cups semi sweet chocolate chips 
1 cup heavy cream

Preheat oven to 350

Mix all dry ingredients in a bowl and set aside, in a larger bowl mix water, vanilla and mayo til smooth and slowly stir in dry ingredients with a whisk but do not over mix to keep cake light and airy

Pour batter into lightly greased baking dish
Bake 40-50mins or til toothpick comes out almost clean and let cool completely 

In a heat safe bowl add all chocolate chips and heat up heavy cream slowly in a small pan on the stove til light boil (DO NOT MICROWAVE) 

Pour cream over chocolate chips and let melt to form ganache stirring with a metal spoon or spatula til it comes together while it cooks down (could take up to 30 mins, you can speed this up putting it in the fridge and stirring occasionally)

Once cooled slightly pour over cake evenly and let sit 30 mins in the fridge covered to finish setting up

Keep refrigerated to store
