Ginger Snaps

I love cookies.  As an adult I can even have them as a meal.

Copied from Monica Currie from Cape Breton Cook Book Facebook site.

Ingredients

3/4 cup shortening (Crisco)
1 cup sugar + 2 Tablespoons
1 Egg
1/4 cup molasses
2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon salt

Stuff you will need

Stand mixer or strong arms
Mixing bowls
Mixing spoon
Cookie sheet
Parchment paper

Directions

Preheat over to 350 F.

Cream together shortening and sugar till light and fluffy.  Beat in the egg and molasses.

In a separate mixing bowl, add the other five ingredients.  Gradually add till everything is well mixed together.

Take about 1 tablespoon of dough and form into a ball.

Dip one side of the ball into sugar and place on the parchment paper lined cookie sheet, sugar side up.

Bake at 350 for about 10 minutes.

Grab a cold glass of milk.  Yummy!!
