🧀 Boston Market-Style Mac & Cheese (For 2 Servings)
Ingredients:
- 1 cup elbow macaroni (about 4 oz / 115 g)
- 2 tbsp unsalted butter
- 1½ tbsp all-purpose flour
- 1 cup whole milk (warm)
- ¼ cup heavy cream
- ¼ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ¼ tsp dry mustard (optional)
- 1 cup shredded cheddar cheese (medium or sharp)
- ⅓ cup American cheese (or diced Velveeta)
Instructions:

Cook the Pasta:
Boil macaroni in salted water until just al dente. Drain and set aside — don’t rinse. -
Make the Roux:
In a saucepan, melt butter over medium heat.
Whisk in flour and cook for about 1 minute (just to remove the raw flour taste). -
Add Milk & Cream:
Slowly whisk in the warm milk and cream until smooth. Continue whisking until it thickens slightly (around 4–5 minutes). -
Season:
Stir in salt, pepper, and dry mustard if using. -
Add Cheese:
Lower the heat to medium-low. Gradually stir in the cheeses until melted and creamy. -
Combine with Pasta:
Add the cooked macaroni and stir gently until fully coated. Let it simmer on low for 1–2 minutes to blend flavors. -
