For the Pastry:

2 ¼ cups flour
1 tbsp brown sugar
½ tsp salt
½ cup shortening (very cold, cubed)
½ cup butter (very cold, cubed)
~6 tbsp ice water (just enough to bring dough together)

For the Filling:

½ cup brown sugar
½ cup corn syrup
¼ cup melted butter
1 egg
1 tsp vanilla
¼ tsp salt
¼ cup raisins
¼ cup chocolate chips
¼ cup lightly toasted chopped pecans or walnuts
¼ cup finely chopped dried coconut (unsweetened)

1️⃣ Make the Pastry:
Pulse flour, brown sugar, salt, shortening, and butter until crumbly with pea-sized pieces.
Add ice water and mix gently until dough holds together.
Form into two disks, wrap, and chill for 30 minutes.
Roll out dough, cut into 4-inch circles, and place in muffin cups. Keep cold while prepping filling.

2️⃣ Prepare the Filling:
Whisk together brown sugar, corn syrup, melted butter, egg, vanilla, and salt.
Place raisins, chocolate chips, nuts, and coconut into the bottom of each tart shell.
Fill each shell about ⅔ full with syrup mixture.

3️⃣ Bake:
Bake on the bottom rack at 425°F (220°C) for 12–15 minutes.
Cool completely before removing from the pan.

Optional:
For a firmer filling, add 1 extra egg, increase sugar to ¾ cup, and reduce corn syrup to ¼ cup.
