Bacon Spirals

I haven't personally done this.

Actually this morning is going to be the first.

I've got Montreal Spiced Bacon in the fridge.  I'm going to do about 1/2.  If it doesn't turn out, well, I've only wasted about 1/2 of the bacon.

Then again, how could it go wrong?

Ingredients

Thick cut Bacon

Stuff you will need

Cookie sheet
Tin Foil
Wire Rack

Directions

Twist uncooked thick-cut bacon into tight spirals and place on a wire rack set inside a foil-lined baking sheet. Bake at 400 degrees until crispy, about 35 minutes. Let cool on rack.

Low Carb Creamy Shrimp, Salmon and Bacon Keto WOE

Tonya loves to cook.  She didn't used to.  But since we got some "proper" kitchen gadgets, she really enjoys cooking now.

The recipe below is only meant to be a guideline.  There is a video at the bottom of this page.  As you can see, we have a good time when we are cooking.

Isn't that what life's all about?  Having fun, preparing meals and enjoying each other's company.

Ingredients

4 slices thick bacon
10 to 12 sliced button mushrooms
4 oz smoked salmon
4 oz raw shelled shrimp

Butternut Squash scalloped "potatoes" done the Keto WOE

I discovered the butternut squash.  This has been able to replace my potatoes that I miss so much while doing the Keto Way Of Eating (Keto WOE)

I find that butternut squash reminds me of sweet potatoes.

Ingredients

1/2 butternut squash
4 Tablespoons of Butter (Divided)
1 Teaspoon xantham gum
1 Teaspoon Salt
¼ Teaspoon of Pepper
2 Cups of creme
1 Onion
¾ Cup Cheddar Cheese (Shredded)
1/3 cup Bacon Bits

Stuff you will need

Mandolin (Or patience to slice each potatoe to uniform thickness)
1 x sauce Pot
1 x oven safe casserole dish

Directions

Pre-heat the oven to 375 F.

Peel the squash.  Using a mandolin, or if you have the patience, slice thin.

Melt 3 tablespoons of butter in a pot and fry up the onion at medium heat.

Add the xamtham gum and continue to cook the onions till they are done.  Less than 5 minutes.

Add the creme a ½ cup at a time.  Continue to mix.  Add the cheese, bacon bits salt and pepper.  Continue to stir till the cheese is melted.

In an oven proof casserole dish, spray with Pam Cooking Spray.  Then layer, squash, cheese mix, squash, cheese mix, etc.

For added flare, I topped it with some schredded cheese.

Bake for 75 minutes.

Bacon, Lettuce and Tomato Sandwich

This is a sandwich I could eat quite often.

I suspect not everyone would eat this, only because of the bacon.  Then again, I'm not supposed to have the lettuce.  But that's because of gout.  The mysteries of life.

Ingredients

4 slices of white bread
6 slices of crispy bacon
1 tomato cut into slices
4 pieces of lettuce leaves
3 tablespoons of Mayonnaise - divided

Stuff you will need

Toaster
Cutting board
Bread knife

Directions

Toast the bread.

Spread the Mayonnaise on the bread.

Break the bacon in 1/2 and create your first layer.

Add the tomato and then the lettuce.

Top with the final layer of toast.

Cut the 2 sandwiches in 1/2.

Find the TV remote, sit in your favorite chair and dig in.  When your done, burb and have a nap.  Let the dog lick the crumbs off the plate.
