Steamed vs Boiled Corn on the Cob


Steaming your corn on the cob will likely turn out better than boiling, especially with fresh summer corn.

Here’s why:
🌽 Steaming vs. Boiling

Steaming (your pot + insert) ✅ Keeps more of the corn’s natural sweetness and flavor
✅ Doesn’t wash out the sugars and nutrients into the cooking water
✅ Gives you a slightly firmer, “fresh-picked” texture
✅ Less chance of soggy kernels
✅ Easier to cook a batch of 8 evenly

Boiling ✅ Very simple and traditional
❌ Some flavor can move into the water
❌ Corn can become softer if left too long

My preferred method for your 8 ears:
Add about 1–2 inches of water to your pot (water should stay below the steamer basket).

Bring it to a strong simmer/boil.

Place the corn in the steamer insert.
Cover tightly with the lid.

Steam for 8–12 minutes depending on how tender you like it.

Remove and immediately add butter while it’s hot.

For extra flavor:
Add a teaspoon of salt to the steaming water (optional, steam doesn't have salt in it).

Toss a few fresh herbs (like parsley or dill) into the steamer water for a subtle aroma.

After steaming, brush with melted butter mixed with a little Mitch & Tonya’s SHORELINE All Purpose Seasoning for a Cape Breton twist.

One tip: don’t overcook it. Corn doesn’t get better after about 12–15 minutes — it starts losing that crisp, juicy bite.

Tonya’s Easy No-Bake Lemon Cream Pie Bars

Makes: 12–16 bars
Pan: 9×9-inch pan
Graham Cracker Crust
2 cups graham cracker crumbs
½ cup melted butter
¼ cup sugar

Directions:
Mix crumbs, melted butter, and sugar.

Press firmly into a parchment-lined 9×9 pan.
Bake at 350°F for 8–10 minutes.

Cool completely before adding filling.

Lemon Cream Filling
Ingredients
1 (8 oz / 250 g) package cream cheese, softened
1 (14 oz / 300 mL) can sweetened condensed milk
½ cup fresh lemon juice (about 2–3 lemons)
1 tbsp lemon zest
1 tsp vanilla extract
1 cup cold whipping cream (or 1 tub whipped topping)
1 can of Whipped Cream (a little squirt before serving)

Directions
Beat cream cheese until smooth and fluffy.

Slowly add sweetened condensed milk and beat until combined.

Add lemon juice, lemon zest, and vanilla. The mixture will thicken as the lemon reacts with the condensed milk.

In a separate bowl, whip the cream until stiff peaks form.

Gently fold whipped cream into the lemon mixture.

Spread over the cooled crust.

Cover and refrigerate at least 6 hours (overnight is best).

Cut into squares and top with a little whipped cream and lemon zest if desired.

For a cleaner “bring-to-work” bar:
- Freeze them for 30–45 minutes before cutting.
- Cut with a warm knife and wipe between slices.
- Keep refrigerated until serving.

Ingredients
2 (14 oz) packages Lil' Smokies sausages
1 cup packed brown sugar
1 cup pineapple juice
1 cup pineapple chunks, drained (reserve the juice)
2 tablespoons Mitch & Tonya's Cape Breton COAL BBQ Seasoning
1 tablespoon soy sauce
1 teaspoon Dijon mustard (optional, but adds a nice tang)
1 teaspoon apple cider vinegar (balances the sweetness)

Directions
Add the Lil' Smokies to the slow cooker.
In a bowl, whisk together:
Brown sugar
Pineapple juice
Soy sauce
COAL BBQ Seasoning
Dijon mustard
Apple cider vinegar

Pour over the sausages.
Stir in the pineapple chunks.

Cook:
Low: 3-4 hours
High: 1½-2 hours
Stir before serving.

Mitch & Tonya's Western SHORELINE Omelet

Here's a classic Western Omelet that works great for breakfast, brunch, or even supper.

Mitch & Tonya's Western SHORELINE Omelet

Ingredients (1 large omelet)
3 large eggs
1 tbsp milk or water
1 tbsp butter
¼ cup diced ham
¼ cup diced green bell pepper
2 tbsp diced onion
¼ cup shredded cheddar cheese
½ to 1 tsp Mitch & Tonya's Cape Breton SHORELINE Seasoning (or salt and pepper to taste)

Instructions
Whisk the eggs with the milk (or water) and SHORELINE seasoning until well combined.
Melt the butter in an 8-inch non-stick skillet over medium heat.

Sauté the ham, onion, and green pepper for 3–4 minutes, until the vegetables soften.
Remove the ham and vegetables to a plate.

Pour the egg mixture into the skillet. As the eggs begin to set, gently pull the cooked edges toward the center, allowing the uncooked egg to flow underneath.

When the eggs are almost set, spoon the ham and vegetable mixture over one half of the omelet.

Sprinkle the cheddar cheese on top of the filling.

Fold the other half of the omelet over the filling and cook for another 30–60 seconds, until the cheese melts.

Slide onto a plate and serve immediately.

Great with:
Buttered toast
Hash browns or home fries
Fresh fruit

A little ketchup or hot sauce if you like

Mussels Cooked in White Wine

Fresh Atlantic mussels, garlic, butter, and a splash of white wine come together with the light coastal flavor of Cape Breton SHORELINE Seasoning for a simple meal that tastes like the East Coast.

Ingredients
2 lb (900 g) fresh mussels, cleaned and debearded
2 Tbsp butter
1 Tbsp olive oil
3 cloves garlic, minced
1 small shallot (or ½ small onion), finely diced
1 cup dry white wine (Pinot Grigio or Sauvignon Blanc work well)
1 Tbsp Mitch & Tonya's Cape Breton SHORELINE Seasoning
2 Tbsp fresh parsley, chopped
Juice of ½ lemon
Freshly ground black pepper, to taste

Instructions
Rinse the mussels well and discard any that are cracked or remain open after being tapped.

In a large pot with a lid, melt the butter with the olive oil over medium heat.

Add the shallot and cook for 2–3 minutes until softened. Stir in the garlic and cook for another 30 seconds.

Pour in the white wine and stir in the Cape Breton SHORELINE Seasoning. Bring to a gentle simmer.

Add the mussels, cover the pot, and steam for 5–7 minutes, giving the pot an occasional shake.

When the mussels have opened, stir in the parsley and lemon juice. Season with black pepper if desired.

Discard any mussels that do not open during cooking.

Serving Suggestions
Serve with warm crusty bread to soak up the delicious white wine broth, or spoon the mussels over buttered linguine for an easy seafood dinner.

This version showcases Mitch & Tonya's Cape Breton SHORELINE Seasoning instead of Old Bay, letting the seafood shine while adding a savory Cape Breton coastal flavor.

Ingredients

Seafood
1 lb large dry sea scallops, side muscles removed
1 cup cooked lobster meat (about 5–6 oz), cut into bite-size pieces
1 tsp Mitch & Tonya's Cape Breton SHORELINE Seasoning, divided
¼ tsp black pepper
1 tbsp neutral cooking oil

Chowder
3 tbsp unsalted butter
1 small yellow onion, finely diced
2 cloves garlic, minced
2 tbsp all-purpose flour
3 medium Yukon Gold potatoes, peeled and cut into ½-inch cubes
3 cups low-sodium seafood stock (preferred) or chicken broth
1 cup whole milk
1 cup heavy cream
2 cups sweet corn kernels (fresh, frozen, or canned and drained)
1 tsp Mitch & Tonya's Cape Breton SHORELINE Seasoning
½ tsp smoked paprika
1 tbsp fresh lemon juice

Finish
2 tbsp fresh parsley, chopped
Optional: 2 tbsp chopped green onions
Extra SHORELINE Seasoning for serving

Instructions

1. Season the Seafood
Pat the scallops dry and season with ½ tsp SHORELINE Seasoning and black pepper.

Season the lobster with the remaining ½ tsp SHORELINE Seasoning and set aside.

2. Sear the Scallops
Heat the oil over medium-high heat.

Sear the scallops for about 2 minutes per side until beautifully golden.

Remove from the pan and set aside.

3. Build the Chowder
Reduce heat to medium.

Melt the butter and sauté the onion for about 5 minutes until softened.

Add the garlic and cook for 30 seconds.

Sprinkle in the flour and cook for 1 minute, stirring constantly.

Slowly whisk in the seafood stock until smooth.

Add:
- Potatoes
- Corn
- 1 tsp SHORELINE Seasoning
- Smoked paprika

Bring to a gentle simmer and cook for 12–15 minutes, until the potatoes are fork tender.

4. Make It Creamy
Stir in the milk and heavy cream.
Heat gently for about 5 minutes. Do not boil.

5. Finish
Add the lobster and seared scallops.
Simmer gently for 2–3 minutes just until everything is heated through.

Stir in the lemon juice and most of the parsley.

Taste and add a little more SHORELINE Seasoning if desired.

Serve
Ladle into warm bowls and garnish with:
- Remaining parsley
- Green onions
- A light sprinkle of SHORELINE Seasoning

12 oz (340 g) linguine
1½ lbs (680 g) large shrimp, peeled, deveined, tails removed
2 tbsp olive oil

A quick, one-pan supper loaded with smoky Cape Breton flavour! Crispy gnocchi, juicy Italian sausage, and colourful roasted vegetables come together in under 40 minutes with the bold taste of Cape Breton COAL BBQ Seasoning.

Ingredients
1 lb (454 g) shelf-stable potato gnocchi
12 oz (340 g) spicy Italian sausage links, sliced into ½-inch rounds
2 bell peppers (any colour), sliced
1 medium red onion, sliced
2 tbsp olive oil
2 tsp Mitch & Tonya's Cape Breton COAL BBQ Seasoning
½ tsp garlic powder
Optional: Fresh parsley, chopped
Optional: Freshly grated Parmesan cheese

Instructions
Preheat your oven to 400°F (200°C).

Line a large sheet pan with parchment paper or lightly grease it.

Add the gnocchi, sliced sausage, peppers, and red onion to the pan.

A simple, buttery side dish that's perfect with chicken, pork, seafood, or grilled vegetables.

Ingredients
1 cup basmati rice
2 cups low-sodium chicken broth (or vegetable broth)
1 tbsp butter
1 tbsp olive oil
¼ cup onion, finely diced
2 cloves garlic, minced
1½ tsp Mitch & Tonya's Cape Breton SHORELINE All Purpose Seasoning
1 tbsp fresh parsley, chopped (optional)
Lemon wedges, for serving (optional)

Directions
Rinse the basmati rice under cold water until the water runs mostly clear. Drain well.

In a medium saucepan, melt the butter with the olive oil over medium heat.

Add the onion and cook for 3–4 minutes until softened.

Stir in the garlic and cook for 30 seconds.
Add the SHORELINE Vegetable Seasoning and stir for about 15 seconds to bloom the flavors.

Stir in the rice and cook for 1–2 minutes, coating every grain.

Pour in the broth and bring to a gentle boil.

Cock Soup (Jamaica 🇯🇲)

A friend of ours is dating a gentleman from Jamaica and she says this is the absolute best soup she has ever had.

Ingredients
2 cups fine egg noodles, broken into small pieces
4 Cups water
1Cup finely diced chicken (shredded)
1/4 Cup Cock Dry Soup Mix
1 medium grated carrot
1 small diced onion
1 small stock celery, diced

Directions
Add everything to a pot and burner to medium heat.

Simmer for 5–7 minutes, stirring occasionally, until the noodles are tender.

Tonya’s Fix - Spanish Rice

Cape Breton Spanish Rice (Corn Version)
Serves: 4–6

Ingredients
2 tbsp butter or vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 cup long-grain white rice (uncooked)
1 can (28 oz / 796 mL) diced tomatoes (with juice)
1 can (14 oz / 398 mL) corn, drained
1 cup chicken broth
1 Tbsp ketchup (replaces tomato paste)
1 Tbsp Cape Breton Vegetable Seasoning
1 tsp paprika
½ tsp chili powder
½ tsp cumin
½ tsp oregano
¼ tsp black pepper

Instructions
Heat butter or oil in a large skillet or pot over medium heat.

Sauté onion for 4–5 minutes until soft.

Add garlic and cook 30 seconds.

Stir in uncooked rice and toast for 2–3 minutes, stirring often.

Add diced tomatoes, chicken broth, ketchup, Cape Breton Vegetable Seasoning, paprika, chili powder, cumin, oregano, and pepper. Stir well.

Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes.

At the 10-minute mark, stir in the drained corn, then re-cover and continue cooking.

Once rice is tender and liquid is absorbed, remove from heat and let sit 5 minutes.
Fluff with a fork and serve.

Notes (Cape Breton twist)

The Cape Breton Vegetable Seasoning replaces the need for extra salt-heavy seasoning blends — it does most of the flavor lifting here.

The corn adds sweetness, so the ketchup works nicely as a mild tomato base without needing paste.

Here's a creamy seafood salad that's perfect for sandwiches, croissants, crackers, or served on lettuce.

Ingredients

  • 1 lb (450 g) imitation crab meat (pollock), chopped into bite-sized pieces

  • 1 lb (450 g) shrimp, cooked, devined and tailed

  • ½ cup celery, finely diced

  • ¼ cup red onion, finely diced

  • 2 tbsp green onion, sliced

  • 2 tsp dried dill

  • 1 tbsp fresh parsley, chopped

  • ½ cup mayonnaise

  • 2 tbsp sour cream

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • ¼ tsp black pepper

Optional Add-ins

  • 1 chopped hard-boiled egg

  • 1 tbsp sweet pickle relish

  • A pinch of cayenne pepper or your favorite seafood seasoning

Instructions

  1. In a large bowl, combine the seafood, celery, red onion, green onion, dill, and parsley.

  2. In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, garlic powder, onion powder, paprika, and pepper.

  3. Fold the dressing into the seafood mixture until everything is evenly coated.

  4. Cover and refrigerate for at least 1 hour to allow the flavors to develop.

  5. Serve chilled.

1. Bring water to a boil first
Use a big pot
Enough water to fully cover the corn

2. Don’t salt the water
Salt can toughen the kernels
If anything, add a teaspoon of sugar if your corn isn’t super fresh

3. Add husked corn
Drop it in once the water is already boiling

4. Cook for 4–6 minutes

🧂 Ingredients
1 cup sour cream
1/2 cup mayonnaise
1 to 1½ tbsp SHORELINE All Purpose Seasoning

1 tsp lemon juice (optional, but brightens it up)
1 tsp dried parsley (optional for color & light herb note)

Mix sour cream and mayo until smooth.

Stir in SHORELINE seasoning.

Taco


This is a really popular recipe.  Of course you can modify it to make it your own family recipe.

Ingredients 

6 x Flat bread
1 pound ground beef
3 Tbsp Taco seasoning * see notes
1/2 cup water
Shredded Tex/Mex cheese
Shredded lettuce
Diced red onion
Diced tomato
Sour cream or salsa

Directions

Brown your ground beef, breaking up any chunks.  If you have a meat masher, this make your job a lot easier.

Add Mitch & Tonya’s Taco Seasoning plus the water and simmer for about 10 minutes.  It will thicken nicely.

Add your ground beef and as much of the toppings as you like.

You can have hard shell tacos.
Taco bowls.
Open face tacos.
Tightly wrapped tacos.
It is really your choice.  

Yes, wrapped tacos are sometimes called burritos.  I like them wrapped so the fillings don't fall out.

Note: I make my own taco seasoning.  It has about half the salt in commercial bought seasoning, plus no fillers.

Cape Breton MAPLE COAL Teriyaki Chicken Stir-Fry

Ingredients

2 boneless, skinless chicken breasts, sliced into thin strips
2 tsp Cape Breton MAPLE COAL BBQ Seasoning
2 tbsp vegetable oil
1 small onion, sliced
1 red bell pepper, sliced
2 cups broccoli florets
1 cup sliced carrots
1 cup mushrooms, sliced (optional)
3 cloves garlic, minced
1 (340–400 g) package chow mein or stir-fry noodles, cooked
½ cup teriyaki sauce
1 tsp sesame oil (optional)
Sesame seeds and sliced green onions for garnish (optional)

Directions
Season the sliced chicken with the Cape Breton MAPLE COAL BBQ Seasoning.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Cook the chicken for 5–7 minutes until browned and fully cooked. Remove from the pan.

Add the onion, broccoli, carrots, peppers, mushrooms, and garlic. Stir-fry for 4–5 minutes until the vegetables are crisp-tender.

Return the chicken to the pan.

Add the cooked noodles and pour in the teriyaki sauce. Toss everything together until evenly coated and heated through.

If desired, drizzle with sesame oil and garnish with sesame seeds and sliced green onions.
