๐Ÿฅš Frittata Muffins Recipe

Ingredients (makes 12 muffins):

  • 10 large eggs
  • ¼ cup milk (or cream for richer muffins)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheese (cheddar, mozzarella, or feta)
  • 1 cup cooked meat (ham, sausage, bacon, or turkey), chopped
  • 1 cup vegetables (bell peppers, spinach, zucchini, mushrooms, broccoli, or onions), finely chopped
  • 1 tbsp olive oil or butter (for sautรฉing veggies, optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with silicone liners.

  2. Cook veggies & meat (if needed):

    • Heat a skillet with olive oil or butter.
    • Sautรฉ vegetables until just tender.
    • If using raw sausage or bacon, cook thoroughly and drain excess fat.
  3. Whisk eggs:

    • In a large bowl, whisk together eggs, milk, salt, and pepper until smooth.
  4. Assemble muffins:

    • Divide cooked veggies and meat evenly among muffin cups.
    • Sprinkle cheese over each cup.
    • Pour egg mixture evenly into each cup (fill about ¾ full).
  5. Bake for 18–22 minutes, or until the eggs are set and tops are lightly golden.

  6. Cool & serve:

    • Let muffins rest for 5 minutes before removing from the tin.
    • Enjoy warm, or store in the fridge up to 4 days (or freeze up to 2 months).
