STUFFED PEPPER CASSEROLE
Ingredients
1 lb ground beef
1 cup uncooked white rice
2 cups bell peppers, diced (red & green)
1 small onion, chopped
2 cups tomato sauce or crushed tomatoes
1½ cups shredded cheddar cheese
1 tsp garlic powder
1 tsp paprika
Salt & black pepper, to taste
Instructions
Preheat oven to 375°F (190°C).
Brown the ground beef with onion in a skillet; drain excess fat.
Stir in rice, bell peppers, tomato sauce, garlic powder, paprika, salt, and pepper.
Transfer mixture to a greased baking dish and cover tightly with foil.
Bake for 40–45 minutes, until rice is tender.
Remove foil, sprinkle cheese on top, and bake 10 minutes more until melted.
