🍝 Blackened Chicken Alfredo (Skillet + Saucepan)
Ingredients
For the Chicken
2 large chicken breasts, sliced into cutlets
1½ Tbsp butter or oil
2–3 Tbsp blackened seasoning
For the Alfredo Sauce
2 Tbsp butter
3 cloves garlic, minced
1½ cups heavy cream
¾ cup freshly grated Parmesan
Salt & pepper, to taste
For the Pasta
10–12 oz fettuccine or penne
Directions
Cook the pasta
Boil in well-salted water until al dente.
Reserve ½ cup pasta water, then drain.
Blacken the chicken
Season chicken with butter + blackened seasoning.
Sear in hot skillet 3–4 min/side.
Rest, then slice.
Make the sauce
In a saucepan, melt butter over medium.
Add garlic → cook 30 sec.
Add cream → simmer 5–7 min until slightly thick.
Stir in Parmesan. Season to taste.
Combine
Toss pasta with sauce (add pasta water if needed).
Top with sliced blackened chicken.

• Add sautéed mushrooms or spinach
• Finish with a squeeze of lemon
• Sprinkle parsley or extra Parm on top
