Spicy Shrimp & Cheesy Penne in Creamy Velveeta Sauce 🍤🧀
Ingredients:
1. 12 oz penne pasta
2. 1 lb large shrimp, peeled and deveined
3. 2 tbsp olive oil
4. 3 tbsp unsalted butter
5. 4 cloves garlic, minced
6. 1 small onion, finely diced
7. 1 tbsp all-purpose flour
8. 1 cup chicken broth
9. 2 cups heavy cream
10. 4 oz cream cheese, cubed
11. 1 cup shredded Velveeta cheese
12. 1 cup shredded Cheddar cheese
13. 1/2 tsp cayenne pepper
14. 1 tsp red pepper flakes
15. Salt and black pepper, to taste
16. Fresh parsley for garnish (optional)
Directions:
1. Boil a pot of salted water and cook the penne until it's just right, then drain and set aside.
2. Dry the shrimp and lightly season with salt and pepper.
3. Heat olive oil in a skillet, cook the shrimp until pink and slightly browned, then set aside.
4. Melt butter in the same skillet, add onion and cook until soft. Stir in garlic and cook until fragrant.
5. Sprinkle flour over the mix and stir until everything is coated.
6. Slowly pour in chicken broth while stirring. Add heavy cream and bring to a gentle simmer.
7. Add cream cheese, Velveeta, and Cheddar. Stir until melted and the sauce is thick and creamy.
8. Mix in cayenne pepper and red pepper flakes. Adjust seasoning with salt and pepper.
9. Return shrimp to the skillet and mix into the creamy Velveeta sauce.
10. Add penne and gently toss until coated in the cheesy garlic butter sauce.
11. Let it simmer for 1–2 minutes to blend flavors.
12. Serve warm, garnished with parsley if desired.
