Chopped Grilled Cheese Sandwich


I do like a good grilled cheese sandwich.  Some recipes are absolutely bizarre in the ingredients list.  This one isn't too bad.

Ingredients 

8 oz Philadelphia Cream Cheese 
5 strips of cooked bacon
2 jalapeño cut and seeds removed
4 oz of shredded cheddar cheese 
4 or 6 or 8 slices of bread
Butter for the grill

Stuff you will need 

Mixing bowl 
Spatula
Cutting board 
Sharp knife 
Grill pan
Heat resistant spatula to flip the sandwich in the pan

Directions

On your cutting board, cut up the bacon.

Add the bacon, softened cream cheese, jalapeño and your shredded cheese.  Using your spatula, mix up all the ingredients. 

On 2 or 3 or 4 slices of bread, spread a layer of your cheese mix.  The reason for the amount of bread will depend on how thick you want your grilled cheese sandwich.  Or..  you might have HUGE slices of bread... or little wee slices of bread.

Grill pan on the stove and heat to medium.  When the pan is hot, add a dab of butter to the pan and add your grilled cheese sandwich.  Flip when the sandwich is golden brown.  Once the other side is cooked, serve right away.

PRO TIP:
Put mayonnaise on the outside of the bread (the side that touches the grill).  This will add another flavour note that you don't get with butter.  Remember, mayonnaise, NOT Miracle Whip. 

Second tip:
Don't mind the mess?  

Skip the mixing bowl and put your cream cheese directly on the cutting board and spread it out.  

Layer your bacon on top of the cream cheese.  

Layer your jalapeño, followed by the shredded cheddar cheese.  

Using your knife, start chopping up the ingredients.  

Thus why it is called a "Chopped Grill Cheese Sandwich".
