Pineapple Chicken, One Pan, Dump Casserole


If I can get a simple recipe AND it is simple to make...  winner winner chicken dinner!

Ingredients 

1 1/2 cups basmati rice, rinsed
1 cup chicken broth
Sprinkle of seasoning for your rice, garlic powder, onion powder, black pepper, turmeric 
3 or 4 pieces of chicken breast, diced into bite sized pieces, or pre-cooked whole chicken from the dell, boned and in bite sized pieces
2 Tbsp olive oil
More seasoning from the heart
1 bottle BBQ sauce, for chicken or pork
1 large can chunked pineapple, 540 ml, not drained
1 1/2 cups of California Frozen Mixed Veg

Stuff you will need 

Deep dish baking pan
Pam cooking spray
Mixing bowl 
Mixing spoon

Directions

Heat oven to 350 F.

Dump your basmati rice into the baking dish.

Add the chicken stock. 

Add your rice seasonings. 

Add your frozen veg and layer it out.

To you mixing bowl, add chicken, seasonings, olive oil.  Mix. 

Add the BBQ Sauce.  Mix.

Dump this into the baking dish and spread out.

Dump the (not drained) crushed pineapple, and layer that out.

Bake for 45 minutes.  Do not cover.

Let it cool before you eat this.  Otherwise you are you going to burn your mouth.
