Creamy Rotisserie Chicken Casserole


This is 100% comfort food

Ingredients 

1 x rotisserie chicken, boned, you need 2 cups
2 Tbsp butter
1 x onion, diced
2 ribs celery, diced
2 carrots, diced
2 Tbsp flour
1/2 tsp celtic salt 
1 tsp black pepper 
1 tsp garlic powder 
1 pinch of thyme 
2 cups milk
3 cups cooked egg noodles
1 cup peas
1/2 cup panko bread crumbs 
1 Tbsp olive oil

Stuff you will need 

8x8 baking dish 
Cutting board 
Sharp knife 
Mixing bowl 
Whisk 
Cast iron skillet 

Directions

Bone the chicken, shred about 2 cups worth.

Into your skillet on medium heat, add the butter.  Let melt.  Add onion, celery and carrots.  Fry fry fry, till softened.

Add the flour and continue to fry till you can't smell the flout cooking.  Add milk and stir till you have a gravy.  Add spices. Stir stir stir.

Add the cooked noodles, chicken and peas.  Mix mix mix.

Transfer to the baking dish.

In another mixing bowl, whisk together the bread crumbs and olive oil.  Layer that on top of the casserole. 

Bake 400 F for 15 minutes.
