Cheesy Cajun Garlic Chicken Rotini

Cheesy Cajun Garlic Chicken Rotini Skillet Recipe

Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized chunks
12 oz rotini pasta
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1 teaspoon Salt 
1 teaspoon pepper 
5 cloves garlic, minced
1 tbsp butter
1 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
Fresh parsley, chopped (garnish) optional*

Bring a large pot of water to a boil. Cook pasta according to package directions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

Add chicken to skillet and cook until browned and fully cooked, about 8-9 minutes. Remove from skillet and set aside.

In the same skillet, melt the butter. Add the garlic and sautรฉ for 1 minute until fragrant.

Stir in the chicken broth and heavy cream, then bring it to a simmer.

Add the mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.

Add the cooked rotini and chicken back into the skillet. 

Toss everything until its well-coated in the Cajun garlic sauce. Let simmer for 2-3 minutes to blend flavors.

Garnish with parsley if you’d like.
