Knockoff VH Pineapple Sauce

VH’s Pineapple Sauce is bright, tangy, tropical-sweet with a savory backbone — almost like a cross between a sweet-and-sour glaze and a teriyaki with a pineapple punch.

Here’s a tested-style recipe you can safely water-bath can, with thickening done after opening (like the other sauces).


๐Ÿ Knockoff VH Pineapple Sauce (Canning Recipe)

Ingredients (makes ~6 half-pints)

  • 3 cups pineapple juice (100% juice, not from concentrate if possible)
  • 1 cup crushed pineapple (in juice, not syrup)
  • 1 cup white vinegar (5% acidity)
  • 1 ½ cups white sugar
  • ½ cup brown sugar
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 medium onion, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated (or ½ tsp ground)
  • ½ tsp chili flakes (optional, for subtle heat)
  • ½ tsp salt

To thicken after opening (not before canning):

  • 3 tbsp cornstarch + 3 tbsp cold water (slurry)

Instructions

  1. Cook base: In a large pot, combine pineapple juice, crushed pineapple, vinegar, sugars, soy sauce, ketchup, and Worcestershire. Bring to a boil.
  2. Add aromatics: Stir in onion, pepper, garlic, ginger, chili flakes, and salt. Reduce heat and simmer 20 minutes until veggies soften.
  3. Smooth or chunky:
    • For a smooth bottled-style sauce, use an immersion blender to puree.
    • For a restaurant-style chunky pineapple sauce, leave as is.
  4. Prepare jars: Wash and sterilize jars, lids, and bands. Keep jars hot until ready.
  5. Fill jars: Ladle hot sauce into hot jars, leaving ½ inch headspace. Remove bubbles, wipe rims, apply lids and bands.
  6. Process:
    • Place jars in boiling water canner with at least 1" water covering them.
    • Process 20 minutes for half-pints/pints (adjust for altitude).
  7. Cool & store: Remove jars, cool 12–24 hours, check seals. Store up to 1 year. Refrigerate after opening.

To Thicken for Use

  1. Pour contents of jar into saucepan, bring to simmer.
  2. Stir in cornstarch slurry (3 tbsp cornstarch + 3 tbsp water).
  3. Cook until glossy and thickened — just like VH Pineapple Sauce.
