Minced Meat, Potatoes, and Carrots

Minced Meat, Potatoes, and Carrots Recipe 
 
Ingredients:
 
- 1 lb ground beef or pork
- 2 large potatoes, peeled and cubed
- 1 cup carrots, peeled and diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional, adds umami)
- 1 teaspoon cornstarch
- 1 tablespoon cooking oil
- Salt and pepper to taste
- 2 tablespoons chopped green onions (for garnish)
 
Directions:
 
1. Prepare the ingredients: Peel and cube the potatoes and dice the carrots. Chop the onion and mince the garlic.

2. Cook the meat: Heat the cooking oil in a large skillet or wok over medium-high heat. Add the ground meat and cook, breaking it up with a spatula, until browned. Drain off any excess fat.

3. Sautรฉ aromatics: Add the onion and garlic to the skillet and sautรฉ for about 1 minute, until fragrant.

4. Add potatoes and carrots: Add the potatoes and carrots to the skillet. Stir to combine.

5. Season and simmer: Pour in the soy sauce and oyster sauce (if using). Season with salt and pepper to taste. Add about 1/2 cup of water and bring to a simmer. Cover and cook for about 15-20 minutes, or until the potatoes are tender.  Stir occasionally to prevent sticking.

6. Thicken the sauce: In a small bowl, whisk together the cornstarch with 2 tablespoons of cold water to form a slurry. Pour the slurry into the skillet and stir until the sauce thickens slightly.

7. Garnish and serve: Garnish with chopped green onions. Serve hot with rice.
 
Tips and Variations:
 
- For a spicier dish, add a pinch of red pepper flakes or a dash of chili garlic sauce.

- You can substitute other vegetables, such as bell peppers or peas.

- If you prefer a richer sauce, you can add a tablespoon of brown sugar or honey.

- For a thicker sauce, use more cornstarch.

- Feel free to adjust the amount of soy sauce and oyster sauce to your liking.
