Tex‑Mex Chicken Fajita Marinade

Ingredients
Zest and juice of 2 limes
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon coriander
1 teaspoon dried oregano
4 finely minced garlic cloves
1 peeled and small diced shallot
2 tablespoons honey
¾ cup olive oil
Salt and pepper to taste
