Ingredients:

  • 3 cups rotisserie chicken, shredded or diced

  • 2 celery stalks, finely diced
  • 2 tbsp red onion or green onion, finely minced
  • 1 tsp fresh lemon juice or white vinegar

  • Salt and freshly ground black pepper, to taste
  • (Optional) 1 hard-boiled egg, finely chopped — makes it richer and creamier

Instructions:

  1. In a large bowl, mix together mayonnaise, Dijon, lemon juice, and garlic powder.
  2. Add in chicken, celery, and onion. Stir until everything is evenly coated.
  3. Season with salt and pepper to taste.
