Australian Busters


Busters are savory biscuits or crackers that were given this unusual name because when eaten without caution they become belt busters.

Here's a simple recipe for Australian Busters, those deliciously cheesy and buttery biscuits:

*Ingredients:*

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 8 tablespoons butter, diced
- 3 1/2 cups shredded cheddar cheese
- 6-7 tablespoons water

*Instructions:*

1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and lightly spray with nonstick spray.

2. In a large bowl, combine flour and salt. Add diced butter and rub it into the flour until the mixture resembles coarse crumbs.

3. Mix in the shredded cheddar cheese.

4. Add 6 tablespoons of water and cayenne pepper. Stir until the dough comes together, adding an extra tablespoon of water if needed.

5. Roll out the dough to ¼-inch thickness. Cut into 3-inch rounds using a biscuit cutter or a glass.

6. Prick each biscuit with a fork about 10 times to prevent puffing.

7. Bake for 15 minutes or until lightly golden. For extra crispiness, bake for 1-2 minutes longer.

8. Let the biscuits cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

- Use cold ingredients for a flaky texture.

- Don't overmix the dough to avoid tough biscuits.

- Experiment with different cheese flavors or spice levels to customize the recipe.
